Quick Vegan Carrot Cake Recipe

I am so excited to be sharing this awesome carrot cake recipe with all of you! The best thing is, everyone can eat it.

My family absolutely love this carrot cake, I am not exaggerating when I say I have made this three times this month. If you love desserts that are not too sweet but satisfy your craving, then this cake is definitely something you need to bake!

PREP TIME: 15 mins

COOK TIME: 40 mins

SERVING:   8-10 



  • 1 1/2 cups of All Purpose Flour
  • 1 Cup of Almond Milk
  • 1/2 Cup of Soft Vegan Margarine
  • 1 Cup of Grated Carrots
  • 1/2 Cup of Sugar
  • 3/4 Cup of Apple Sauce
  • 1 Tsp of Vanilla
  • 3/4 Tsp of Baking Powder



PREP CAKE MIXTURE:  Add flour, apple sauce, soft margarine and sugar in to a bowl. Add the milk slowly into the mixture (if the mixture is still not at the consistency it supposed to be you can add more milk). Whisk them all together either using an electric whisk or a handheld manual whisk, add in the vanilla and baking powder. Once you have whisked all the ingredients together add in the grated carrots and fold them into the mixture.


PREP BAKING TRAY:  Grease a 9 inch round baking tray with vegan margarine, you can sprinkle some flour over the margarine to avoid the mixture sticking to the bottom, evenly spread out the mixture into the tray and bake it in the pre heated oven for 40 mins. Allow the cake to completely cool off before removing it from the tray.

I will also add in the ingredients and instructions for the vegan icing.  

Ingredients for the Vegan Vanilla Icing 

  • 3 cups of Powdered Sugar
  • 1 Cup of Vegan Margarine
  • 3 Tablespoon of Almond Milk
  • 2 Tablespoon of Vanilla

Add the powdered sugar, margarine, milk and vanilla extract into a bowl and whisk the mixture until it become a thick and almost fluffy texture.  You can always add more sugar if its too runny or add more milk if it is too thick. Once you have reached the right consistency for the icing, you may continue to frost your carrot cake but i personally allow the icing to sit in the fridge for a while.

You can always add grounded nuts or carrot flakes to sprinkle over your cake, personally i prefer crushed granola or walnuts.
